Ingredients

For the Marinade

  • 1 pound large shrimp, peeled and deveined
  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Sauce

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Additional

  • 1/4 cup fresh parsley, chopped (for garnish)
  • Cooked pasta or crusty bread (for serving)

Instructions

Marinating the Shrimp

  • In a bowl, combine the shrimp with minced garlic, olive oil, dried oregano, salt, and pepper.
  • Allow it to soak up the flavors for a minimum of 30 minutes in the fridge.

Preparing the Sauce

  • In a large skillet, heat olive oil over medium heat.
  • Add chopped onions and garlic, sauté until softened.
  • Pour in crushed tomatoes, dried basil, dried oregano, salt, and pepper.
  • Simmer the sauce for 15-20 minutes, allowing flavors to meld.

Cooking the Shrimp

  • Remove marinated shrimp from the refrigerator.
  • Add the shrimp to the simmering tomato sauce, cooking until they turn pink and opaque (about 3-4 minutes).

Serving

  • Spoon the Don Peppe Shrimp Luciano over cooked pasta or serve with crusty bread.
  • Sprinkle fresh parsley on top for a pop of color and a burst of freshness.
