Ingredients

  • 2 cups shredded cooked chicken (rotisserie chicken works well)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced green onions
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 12 small flour tortillas
  • Cooking oil for frying

Instructions

  • Prepare the Filling: In a mixing bowl, combine shredded chicken, Monterey Jack cheese, green onions, cilantro, ground cumin, chili powder, garlic powder, salt, and pepper. Mix well.
  • Fill the Tortillas: Spoon a generous amount of the chicken mixture onto each tortilla, spreading it along the center.
  • Roll the Flautas: Roll each tortilla tightly around the filling, creating a cigar-like shape.
  • Secure with Toothpicks: Use toothpicks to secure the seams of the flautas, preventing them from unraveling during cooking.
  • Fry the Flautas: In a skillet, heat cooking oil over medium-high heat. Carefully place the flautas seam side down and fry until golden brown and crispy. Use tongs to turn them for even cooking.
  • Drain and Serve: Place the cooked flautas on a paper towel-lined baking sheet to drain excess oil. Remove toothpicks before serving.
