Heat olive oil over medium heat in a large pot.
Sauté chopped onions and minced garlic until translucent.
Add the soaked speckled butter beans and ham hock (if using) to the pot.
Pour enough water to cover the beans and bring to a boil.
Lower the heat, cover, and let it simmer for 1.5 to 2 hours, or until the beans become tender.
Season with salt and pepper to taste.
