Ingredients

  • 2 cups dried speckled butter beans
  • 6 cups water for soaking
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 smoked ham hock for added flavor (optional)
  • Salt and pepper to taste

Instructions

Preparations

  • Rinse the dried speckled butter beans under cold water.
  • Soak the beans in 6 cups of water overnight or for at least 8 hours.

Cooking

  • Heat olive oil over medium heat in a large pot.
  • Sauté chopped onions and minced garlic until translucent.
  • Add the soaked speckled butter beans and ham hock (if using) to the pot.
  • Pour enough water to cover the beans and bring to a boil.
  • Lower the heat, cover, and let it simmer for 1.5 to 2 hours, or until the beans become tender.
  • Season with salt and pepper to taste.
