In a large skillet, fry sausage patties until completely cooked for three to four minutes per side. Place the patties on a paper towel-lined dish at 165 degrees Fahrenheit.
Break the yolk, turn the egg, and season with freshly ground black pepper.
Place a waffle on a dish and top it with a sausage patty, an egg, and a second waffle to create a sandwich. Cut the sandwich on the diagonal and repeat the process to create eight sandwiches.
