A single pound of boneless, skinless chicken breasts
1-tablespoon Olive Oil
One diced onion
Miniature Minced Garlic Cloves: 2
1 diced chili pepper
1 can of diced tomatoes (14.5 ounces total)
1 tbsp. of tomato paste
1 tsp. chili powder
1 tsp. cumin
Instructions
Prepare a skillet by heating it over medium-low heat, then add the chicken breast to the pan. After the chicken has acquired a browned exterior and reached an internal temperature of 165 degrees Fahrenheit, remove it from the skillet and set it aside.
The diced tomatoes, tomato paste, chili powder, and cumin should all be added now. Cook for approximately 5 minutes while stirring the ingredients until they are thoroughly combined.
Place the chicken back into the skillet and continue to cook over low heat for approximately ten minutes, or until the sauce has reached the desired consistency. Serve over rice and beans. Enjoy!
