Ingredients

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 can of Rotel tomatoes with green chilies
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups of chicken broth
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper, to taste
  • For serving, Tortilla chips, shredded cheese, and sour cream

Instructions

  • In a large pot, sauté the chopped onion and minced garlic until translucent.
  • Add the cooked and shredded chicken, Rotel tomatoes, black beans, corn, chicken broth, chili powder, cumin, paprika, salt, and pepper to the pot.
  • Bring the soup to a boil and then reduce heat to simmer for 20-30 minutes.
  • Serve hot with tortilla chips, shredded cheese, and a dollop of sour cream.
