Ingredients

For the Cookies

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Filling

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 3 tablespoons heavy cream

Instructions

  • Set oven to 350°F (175°C). Then use baking sheets to line with parchment paper or use silicone baking mats.
  • Add and whisk flour, baking soda, baking powder, and salt in a medium-sized bowl. Set aside.
  • Cream together the softened butter and granulated sugar in a large mixing bowl, until light and fluffy.
  • In the bowl add vanilla extra and egg and beat until well combined.
  • Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Dry ingredients should be mixed well and ensure ingredients are incorporated after each addition Be careful not to overmix the batter.
  • On the prepared baking sheets, drop rounded tablespoons of batter, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the cookies are set and lightly golden around the edges. Remove immediately from the oven and place on baking sheets to cool down for few minutes before transferring to a wire rack to cool completely.
  • While the cookies are cooling, prepare the filling. Whisk the softened butter in a mixing bowl until creamy. Gradually add the powdered sugar, vanilla extract, and heavy cream. Beat until smooth and fluffy.
  • Once the cookies have cooled completely, spread or pipe a generous amount of filling onto the flat side of one cookie. Top it with another cookie, flat side down, to create a sandwich.
  • Continue sandwiching with all the remaining cookies and filling.
  • Serve the Vanilla Whoopie Pies immediately or store them in an airtight container for later enjoyment.
