Mary Berry Bara Brith Recipe

Ingredients

  • 500g mixed dried fruit
  • 300ml strong hot tea
  • 225g self-raising flour
  • 1 tsp mixed spice
  • 1 egg, beaten
  • 175g soft brown sugar

Instructions

  • Start by placing the mixed dried fruit in a bowl and pouring the hot tea over it. Let it soak overnight or for at least 6 hours.
  • Preheat your oven to 150°C (300°F) and line your loaf tin with greaseproof paper.
  • In a separate mixing bowl, sift the self-raising flour and mixed spice.
  • Stir in the beaten egg and soft brown sugar until the mixture is well combined.
  • Add the soaked fruit (including any remaining tea) and mix until everything is evenly distributed.
  • Pour the mixture into the prepared loaf tin.
  • Bake in the preheated oven for about 1 1/2 to 2 hours, or until a skewer inserted into the center comes out clean.
  • Allow the bara brith to cool in the tin for a few minutes before transferring it to a wire rack to cool completely.
