Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 1/2 cup fresh spinach leaves
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh mint leaves
  • 1/2 lemon, juiced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  • Start by cutting the chicken breasts into small, bite-sized pieces.
  • In a frying pan, cook the chicken over medium-high heat until it's no longer pink inside, and the outside is slightly browned.
  • While the chicken is cooking, prepare the smoothie mixture. In a blender, combine the yogurt, spinach, basil, mint, lemon juice, minced garlic, salt, and pepper. Blend until smooth.
  • After cooking the chicken, allow it to cool for a few minutes.
  • In a large bowl, combine the cooked chicken and the smoothie mixture. Mix until the chicken pieces are well-coated with the smoothie.
  • Chill the Chicken Smoothie in the refrigerator for about 30 minutes before serving.
