Preheat your oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
Cream together the softened butter and sugar in a large mixing bowl until light and fluffy.
Add the eggs one by one, and make sure to beat the mixture well after adding each egg. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Slowly combine the dry ingredients with the wet ingredients, taking turns and adding sour cream in between. Begin and end with the dry ingredients.
Into the baking pan pour the batter, making sure it's spread out evenly.
Place in the oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Let the coffee cake cool in the pan for 10 minutes before moving it to a wire rack to cool down completely.
