Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  • Preheat your oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
  • Cream together the softened butter and sugar in a large mixing bowl until light and fluffy.
  • Add the eggs one by one, and make sure to beat the mixture well after adding each egg. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Slowly combine the dry ingredients with the wet ingredients, taking turns and adding sour cream in between. Begin and end with the dry ingredients.
  • Into the baking pan pour the batter, making sure it's spread out evenly.
  • Place in the oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let the coffee cake cool in the pan for 10 minutes before moving it to a wire rack to cool down completely.
