Ingredients

For the Spicy Noodles

  • 200g thin rice noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon chili garlic sauce
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger

For the Spring Rolls

  • Rice paper sheets
  • 1 cup shredded lettuce
  • 1 cup julienned carrots
  • 1 cup thinly sliced bell peppers (assorted colors)
  • 1 cup bean sprouts
  • 1/2 cup fresh cilantro leaves
  • Cooked spicy noodles

Instructions

Prepare Spicy Noodles

  • Cook the rice noodles according to package instructions.
  • In a bowl, mix soy sauce, sesame oil, chili garlic sauce, sugar, minced garlic, and grated ginger.
  • Toss the cooked noodles in the spicy sauce until well coated. Set aside.

Soak Rice Paper Sheets

  • Dip each rice paper sheet in warm water for about 10 seconds until it becomes pliable.
  • Place the softened rice paper on a rolling mat or damp cloth.

Assemble Spring Rolls

  • In the center of the rice paper, add a small portion of spicy noodles.
  • Layer shredded lettuce, julienned carrots, sliced bell peppers, bean sprouts, and cilantro on top of the noodles.

Roll and Seal

  • Fold the sides of the rice paper inward, then tightly roll the sheet from the bottom to the top.
  • Seal the edge with a little water.

Repeat and Serve

  • Repeat the process until all ingredients are used.
  • Serve the spicy noodle spring rolls with your favorite dipping sauce.
