Ingredients

  • Bisquick baking mix, 2 cups (see notes for a DIY baking mix)
  • 2 big eggs, beaten lightly
  • 2 Bananas (riped)
  • Only about a 3/4 cup of milk
  • 2 Tablespoons of Butter, Softened
  • Baking Powder 2 Tablespoons

Instructions

  • Oil griddle or skillet lightly. Electric skillets should be heated to medium-low or to 350°F
  • In a medium bowl, combine the baking mix, eggs, milk, butter, and baking powder using a fork or whisk. Mash one banana into the pancake mixture and slice the other. Small bumps are possible. Cooking begins when the pancake mixture bubbles
  • For garnish, thinly slice the second banana
  • Banana pancakes use 1/4 to 1/3 cup of batter, depending on size. Griddle pancake batter. Pancakes should have bubbles and dry edges after 1-2 minutes. Cook the opposite side until golden brown with a pancake turner
  • Served heatedly with maple syrup or honey and butter. Chop walnuts or pecans to garnish
