Ingredients
Bisquick baking mix, 2 cups (see notes for a DIY baking mix)
2 big eggs, beaten lightly
2 Bananas (riped)
Only about a 3/4 cup of milk
2 Tablespoons of Butter, Softened
Baking Powder 2 Tablespoons
Instructions
Oil griddle or skillet lightly. Electric skillets should be heated to medium-low or to 350°F
In a medium bowl, combine the baking mix, eggs, milk, butter, and baking powder using a fork or whisk. Mash one banana into the pancake mixture and slice the other. Small bumps are possible. Cooking begins when the pancake mixture bubbles
For garnish, thinly slice the second banana
Banana pancakes use 1/4 to 1/3 cup of batter, depending on size. Griddle pancake batter. Pancakes should have bubbles and dry edges after 1-2 minutes. Cook the opposite side until golden brown with a pancake turner
Served heatedly with maple syrup or honey and butter. Chop walnuts or pecans to garnish
