  • 2 tablespoons baking powder
  • 1/2 teaspoon baking soda 1/4 teaspoon salt
  • Lightly beaten, one large egg
  • Three teaspoons of canola oil (vegetable oil works too)
  • (For serving) 1 1/2 cups of buttermilk and maple syrup

Instructions

Step 1: Mixing the Ingredients

  • Mix flour, sugar, baking powder, salt, and baking soda in a bowl.
  • Separately, mix the egg, oil, and buttermilk.
  • Mix the wet and dry ingredients until no flour streaks remain.
  • The batter should be lumpy and thick, so don't over-mix it.
  • Wait 5 minutes before cooking the pancake batter. Resting the batter gives pancakes their amazing texture.

Step 2: Cooking the Pancakes

  • Heat a nonstick skillet or griddle while the batter rests.
  • Spray it with baking spray and add 1/4 cup of batter. This recipe makes 12 pancakes, so cook in batches.
  • Cook the pancakes for 1-2 minutes per side until golden. When the bubbles pop, flip the pancakes.
