Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup sliced onions
  • 1/2 cup sliced mushrooms
  • 1/4 cup chicken broth
  • 4 slices of Provolone cheese

Instructions

  • Preheat the oven to 400°F.
  • Heat a grill pan over medium-high heat.
  • Season the chicken with salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper.
  • Grill the chicken for 5-6 minutes per side or until fully cooked.
  • Remove the chicken from the grill pan and place it in a baking dish.
  • Heat olive oil over medium-high heat in a skillet.
  • Add onions and mushrooms to the skillet and sauté for 2-3 minutes.
  • Add chicken broth to the skillet and let it simmer for 2-3 minutes.
  • Pour the onion and mushroom mixture over the chicken.
  • Use a slice of Provolone cheese to top each chicken breast.
  • Bake the chicken for 5-6 minutes or until the cheese is melted and bubbly.
  • Serve hot.
