Chicken Divan Barefoot Contessa

Ingredients

  • Unsalted butter, five tbsp.
  • Only 1 Big Head (about 5 cups) of Broccoli
  • A Measurement of Fresh Sage, One Tablespoon (chopped)
  • All-Purpose Flour, Measured Out to 5 Tablespoons
  • Approximately 3 Tablespoons of Sherry that's been allowed to dry out
  • Chicken broth, one cup (low-sodium)
  • A single cup of milk
  • 1 cup White Cream
  • Nutmeg, freshly grated, one sprinkle
  • Assorted Scallions, 1 Bunch (chopped)
  • 1 1/2 cups Swiss Gruyere (shredded)
  • 3 1/2 pounds of fully cooked chicken (boneless and skinless)
  • Almonds, sliced or chopped fresh, to taste, half a cup (toasted)
  • A half cup of grated Parmesan (grated)
  • One-Fourth Cup Crumbs
  • Salt that has been cured and processed to be kosher (to taste)
  • Grinder-milled pepper (to taste)

Instructions

  • Set the oven's temperature to 400 degrees. Butter should be used to grease a shallow 3-quart casserole pan
  • A big saucepan of salted water. Cook broccoli till green and soft. Take out of the heat, let cool under cold water, and then pat dry. Place aside
  • Melt 4 tablespoons of butter in a large pot over medium heat. Stir in sage and flour after the butter melts and bubbles for a minute
  • Stir the roux for 2-3 minutes to prevent browning. One minute of swirling reduces sherry
  • Add nutmeg, heavy cream, milk, one cup of broth, and salt & pepper to taste. In a medium saucepan, bring the mixture to a simmer and cook for six to seven minutes, stirring frequently to prevent sticking
  • Remove the sauce from the heat after melting the Gruyere and scallions in it
  • Broccoli, chicken, almonds, and sauce are combined in a bowl. The ingredients should be put into a casserole dish
  • In a small bowl, combine 1 tablespoon of butter, Parmesan, and breadcrumbs
  • Pour mixture into casserole
  • Bake until hot and golden, about 35 minutes
