Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup grated Parmesan cheese
  • 1 cup cornflakes, crushed

Instructions

Marinate the Chicken

  • Place the chicken breasts in a bowl and cover them with buttermilk.
  • Let them marinate for at least 30 minutes to ensure tenderness.

Preheat the Oven

  • Preheat your oven to 400°F (200°C).

Prepare the Coating

  • In a shallow bowl, combine flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).

Coat the Chicken

  • Remove the chicken from the buttermilk and coat each piece evenly with the flour mixture.

Melt the Butter

  • In a separate bowl, melt the butter.

Dip in Butter and Cornflake Mixture

  • Dip each floured chicken breast into the melted butter and then press into a mixture of crushed cornflakes and grated Parmesan cheese.

Bake

  • Place the coated chicken breasts in a greased baking dish.
  • Bake for 25-30 minutes or until the chicken is golden brown and cooked through.
