Ingredients

  • 1 ripe avocado
  • 1 small cucumber, peeled and chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon raw apple cider vinegar
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons extra-virgin olive oil
  • Sea salt and black pepper to taste
  • Water (as needed for desired consistency)

Instructions

  • In a blender or food processor, combine the avocado, cucumber, lemon juice, apple cider vinegar, garlic, ginger, dill, parsley, olive oil, sea salt, and black pepper.
  • Blend the ingredients until smooth and creamy. If you find that the dressing is too thick, feel free to add a small amount of water to reach your preferred consistency.
