Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 cup blueberries (fresh or frozen)

Instructions

  • Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • Incorporate Butter: Incorporate cold, cubed butter into the dry ingredients. Use a pastry blender to chop the butter into the flour until it looks like small, lumpy crumbs.
  • Add Buttermilk: Add the buttermilk and stir until everything is mixed together. Don't mix too much; aim for a slightly rough dough.
  • Add Blueberries: Gently fold in the blueberries, distributing them evenly throughout the dough.
  • Roll and Cut: Turn the dough out onto a floured surface. With a floured rolling pin, roll the dough to about 1/2-inch thickness. Use a round cutter to make biscuit shapes and put them on the baking sheet.
  • Bake: Bake for 12-15 minutes or until the tops are golden brown.
  • Serve and Enjoy: Once baked, let the Bo Berry Biscuits cool slightly on the baking sheet before transferring them to a wire rack. Serve warm and enjoy the delightful combination of flaky biscuit and burst of blueberry sweetness.
