Ingredients

  • 2 pounds of fresh mussels, cleaned and debearded
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup dry white wine
  • 1/2 cup chicken or seafood broth
  • 1/2 cup diced tomatoes
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional, for a hint of heat)

Instructions

  • Over medium heat in a large saucepan heat the olive oil. Add the minced garlic and diced onion, then cook until they release a pleasant fragrance and turn translucent.
  • Pour the white wine into the mixture and allow it to gently simmer. Let it cook for about 2 minutes to allow the alcohol to evaporate.
  • Add the diced tomatoes and chicken or seafood broth to the saucepan. Give it a thorough stir and allow the mixture to simmer for an additional 5 minutes.
  • Carefully add the cleaned mussels to the saucepan. Cover with a lid and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.
  • Season the dish with salt, pepper, and red pepper flakes if you prefer a bit of spice. Sprinkle fresh chopped parsley over the mussels.
  • Using a slotted spoon, transfer the Bonefish Mussels to a serving platter. Pour the flavorful broth over the mussels.
