Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 2 cups beef broth
  • 1 can condensed cheddar cheese soup
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, sliced green onions, cooked bacon bits

Instructions

  • In a large pot or Dutch oven, cook the ground beef over medium heat until it is browned. Drain any excess fat.
  • Add the diced onion and minced garlic to the pot and sauté until the onion becomes translucent.
  • Stir in the diced potatoes, beef broth, condensed cheddar cheese soup, and milk. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes or until the potatoes are tender.
  • If you prefer a smoother texture, use a blender or immersion blender to puree some or all of the soup until desired consistency.
  • Stir in the shredded cheddar cheese until it is fully melted and thoroughly incorporated into the soup. Season with salt and pepper to taste.
  • Serve the soup hot, garnished with diced tomatoes, sliced green onions, and cooked bacon bits if desired.
