Ingredients

  • 1 pound boneless, skinless chicken breasts, diced

  • 8 cups chicken broth
  • 2 bay leaves

Instructions

Step 1: Prepare the Ingredients

  • Gather all your ingredients and equipment.
  • Dice the chicken breasts, chop the onion, slice the carrots, and chop the celery.
  • Mince the garlic, and measure out the rice, chicken broth, dried thyme, salt, and pepper.

Step 2: Sauté the Aromatics

  • Heat your large soup pot over medium heat.
  • Add a bit of oil and then add the chopped onion, carrots, celery, and minced garlic.
  • Sauté the vegetables until they become tender and the onion turns translucent, usually for about 5-7 minutes.
