Equipment

  • Grill or barbecue
  • Mixing bowls
  • Whisk or spoon
  • Basting brush
  • Knife
  • Cutting Board

Ingredients

For the chicken marinade

  • 4 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons sake
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon black pepper

For the Japanese BBQ sauce

  • 1/2 cup ketchup
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons sake
  • 2 tablespoons honey
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder

Instructions

  • In a mixing bowl, combine all the chicken marinade ingredients. Mix well until the honey is fully dissolved.
  • Put the chicken breasts in a sealable plastic bag or a shallow dish. Coat each piece of chicken with marinade. Allow the chicken breasts to marinate in the refrigerator for a minimum of 1 hour, or if you want even better flavor, marinate overnight.
  • In the meantime, prepare the Japanese BBQ sauce. In a separate mixing bowl, whisk together all the sauce ingredients until well combined. Set aside.
  • Preheat your grill or barbecue to medium-high heat. Take out the chicken from the marinade and remove any excess marinade.
  • For about 6-8 minutes, place the chicken on the grill and cook each side.
  • As the chicken nears the end of cooking, brush a generous amount of the Japanese BBQ sauce onto each side. Allow the sauce to caramelize and create a beautiful glaze on the chicken.
  • Once cooked through and nicely glazed, remove the chicken from the grill and let it rest for a few minutes. This will ensure juiciness and tenderness.
  • Serve the Japanese BBQ Sauce Chicken hot, garnished with sesame seeds and chopped green onions. It pairs perfectly with steamed rice and a side of fresh vegetables.
