Ingredients

For the pasta salad

  • 8 ounces rotini pasta
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup diced mango
  • 1 cup halved cherry tomatoes
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh basil

For the dressing

  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • Cook the pasta: Take a large pot add water and salt and bring to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Rinse pasta under cold water by draining it in a colander and stop the cooking process. Set aside.
  • Prepare the dressing: In a large mixing bowl, whisk together the olive oil, fresh lime juice, honey, Dijon mustard, salt, and pepper until well combined. Set aside.
  • Assemble the salad: Add the cooked and cooled pasta to the bowl with the dressing. Toss well to coat the pasta evenly.
  • Add the tropical goodness: Add the pineapple chunks, diced mango, cherry tomatoes, red bell pepper, red onion, cilantro, mint, and basil to the bowl with the dressed pasta. Mix all the ingredients together and make sure they are all well combined.
  • Serve and enjoy: Transfer the Jimmy Buffett Pasta Salad to a serving platter or bowl. Garnish with extra fresh herbs, if desired. Serve chilled and enjoy the tropical flavors!
