Ingredients

  • 1 lb (450g) boneless, skinless chicken breast, diced
  • 8 oz (225g) cauliflower florets
  • 8 oz (225g) pasta (linguine or fettuccine work well)
  • 1 packet Knorr Lemon Chicken Seasoning Mix
  • 1 cup heavy cream
  • 1 lemon (zest and juice)
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions

  • In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.
  • As the pasta cooks, use a skillet to heat olive oil over medium-high heat. Add the diced chicken and cook until browned and cooked through. Season with salt and pepper. Take the chicken out of the pan and keep it aside.
  • In the same skillet, add the minced garlic and cauliflower florets. Cook until the cauliflower is tender-crisp and slightly browned.
  • Reduce the heat to medium-low and add the heavy cream, Knorr Lemon Chicken Seasoning Mix, lemon zest, and lemon juice. Stir thoroughly and allow the sauce to simmer for a few minutes until it slightly thickens.
  • In the skillet add the cooked chicken and cooked pasta. Toss everything together until the sauce coats the chicken, pasta, and cauliflower evenly.
  • Garnish with fresh parsley or basil if desired.
