In a mixing bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, dried thyme, and paprika. Season with salt and pepper to taste.
Place the Longjaw Mud Snapper fillets in a baking dish and pour the mixture from the bowl over them. Ensure that the fillets are thoroughly coated with the marinade.
Bake in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork.
Once cooked, remove from the oven and garnish with fresh parsley.
