Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup BBQ sauce
  • 8 cups mixed greens (e.g., romaine, iceberg, and arugula)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup roasted corn kernels
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup tortilla strips
  • 1/4 cup cilantro, chopped
  • 1/4 cup red onion, thinly sliced

Instructions

  • Preheat your grill to medium-high heat.
  • Coat the chicken breasts with olive oil and season with salt and pepper.
  • Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  • During the last few minutes of grilling, brush the chicken with BBQ sauce and allow it to caramelize.
  • Take the chicken off the grill and allow it to rest for a few minutes before cutting it into thin strips.
  • In a large salad bowl, combine the mixed greens, cherry tomatoes, roasted corn, black beans, shredded cheddar cheese, tortilla strips, cilantro, and red onion.
  • Add the grilled chicken strips on top.
  • In a small bowl, whisk together the remaining BBQ sauce and olive oil to make the dressing.
  • Pour the dressing evenly over the salad, then use tongs to mix everything together.
