  • 2 large egg yolks
  • 1 tablespoon Dijon mustard
  • 2 cloves of garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  • In a medium-sized mixing bowl, whisk together the egg yolks and Dijon mustard until well combined.
  • Add the minced garlic, lemon zest, and fresh lemon juice to the bowl. Continue whisking until all the ingredients are thoroughly incorporated.
  • Slowly drizzle the olive oil into the mixture while whisking continuously. All this allows to create a smooth and creamy consistency. It's important to add the oil gradually to avoid the aioli from separating.
  • Continue whisking until the aioli reaches a thick and creamy texture. According to your taste preferences season with salt and pepper.
  • Once the aioli is well blended, transfer it to a jar or airtight container and refrigerate for at least 1 hour to allow the flavors to meld together.
