Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 cup buttermilk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup raisins

Instructions

  • Preheat your oven to 350°F (175°C). Apply a layer of grease and flour to your muffin tin, or use cupcake liners.
  • Combine the flour, sugar, baking powder, baking soda, and salt in a mixing bowl, using a whisk.
  • In a separate bowl, beat the eggs, then add the melted butter and buttermilk. Mix well.
  • Slowly incorporate the wet mixture into the dry ingredients, stirring until they are just mixed well. Be careful not to overmix.
  • Gently fold in the raisins.
  • Fill each muffin cup two-thirds full with the batter.
  • Bake for 20-25 minutes, or until a toothpick inserted into a muffin comes out clean.
  • Allow the Miche Bombs to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
