Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 1 cup diced bell peppers (assorted colors)
  • 1 cup cauliflower rice
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • Salt and pepper to taste
  • 1 cup reduced-fat shredded cheddar cheese
  • 3/4 cup unsweetened almond milk
  • 4 large eggs

Instructions

  • Preheat the oven to 375°F (190°C).
  • Heat the olive oil in a skillet over medium heat. Add the diced onion and bell peppers. Sauté until they start to soften.
  • Add the lean ground beef and minced garlic to the skillet. Cook until the beef is golden-brown and fully cooked. Season with salt and pepper.
  • Stir in the cauliflower rice and cook for an additional 2-3 minutes until it's slightly tender.
  • Transfer the beef and vegetable mixture into a pie dish, spreading it evenly.
  • In a mixing bowl, vigorously whisk the eggs and almond milk together. Pour this mixture over the beef and vegetables in the pie dish.
  • Sprinkle the shredded cheddar cheese on top.
  • Place the pie dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and the pie is set.
  • Once finished, take it out from the oven and allow it to cool slightly before cutting and serving.
