Ingredients

For the Sacchetti pasta dough

  • 2 cups all-purpose flour
  • 2 large eggs
  • A pinch of salt

For the filling

  • Ricotta cheese
  • Spinach
  • Parmesan cheese
  • Salt and pepper
  • Nutmeg (optional)

Instructions

Prepare the Dough

  • On a clean surface, make a mound with the flour and create a well in the center.
  • Break the eggs into the hollow and sprinkle in a pinch of salt.
  • Gradually mix the eggs and flour until it forms a dough.
  • Continue to knead the dough for around 5 minutes until it is completely smooth.
  • Let it rest for 30 minutes while covering with a cloth.

Prepare the Filling

  • Combine ricotta cheese, chopped spinach, grated Parmesan, salt, pepper, and a touch of nutmeg in a mixing bowl.

Roll and Cut the Dough

  • Roll out the pasta dough into a thin sheet.
  • Cut the sheet into small squares or circles.

Assemble the Sacchetti

  • Place a small spoonful of filling in the center of each pasta square.
  • Fold the pasta over to create a pouch, sealing the edges with a bit of water.
  • Optionally, tie the tops with kitchen string to resemble little pouches.

Cook the Sacchetti

  • Boil salted water in a large pot.
  • Gently place the Sacchetti into the boiling water and cook them until they rise to the surface, typically taking 2-3 minutes.
