Taco Bell Power Bowl Recipe

Ingredients

  • 1 cup cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup Greek yogurt (or sour cream)
  • 1/4 cup cilantro, chopped
  • 2 tablespoons taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • In a skillet, heat the olive oil over medium heat. Add the black beans, corn, and diced tomatoes. Stir in the taco seasoning, and cook for about 5 minutes, or until heated through.
  • In a large mixing bowl, combine the cooked brown rice, sautéed bean and corn mixture, and shredded lettuce.
  • Divide the mixture into serving bowls.
  • Top each bowl with diced red onion, shredded cheddar cheese, Greek yogurt (or sour cream), and cilantro.
  • Season with salt and pepper to taste.
  • Serve your Taco Bell Power Bowls hot and enjoy!
