Ingredients

  • 2 cups romaine lettuce, finely chopped
  • 1 cup radicchio, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup garbanzo beans, cooked and drained
  • 1/2 cup roasted red bell peppers, diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cucumber, diced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped

Instructions

  • In a large mixing bowl, combine all the finely chopped vegetables and herbs: romaine lettuce, radicchio, cherry tomatoes, garbanzo beans, roasted red bell peppers, Kalamata olives, feta cheese, red onion, cucumber, parsley, and basil.
  • Gently toss the ingredients to evenly distribute the flavors.
