Ingredients

  • 1 pound ground beef
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 8 slices cooked bacon
  • 1/2 cup pico de gallo (diced tomatoes, onions, and cilantro)
  • 1/4 cup spicy Mexi-ranch sauce

Instructions

  • Set heat to medium-high and preheat your grill or stovetop skillet.
  • Season the ground beef with salt and pepper, then divide it into four equal portions. Shape each portion into a patty.
  • Grill or cook the burger patties for about 4-5 minutes per side, or until they reach your desired level of doneness.
  • While the patties are cooking, place two tortillas on a clean surface. Sprinkle each tortilla with half a cup of shredded cheese.
  • Once the burger patties are cooked, place one patty on each tortilla. Top each patty with two slices of bacon, a spoonful of pico de gallo, and a drizzle of Mexi-ranch sauce.
  • Sprinkle another half a cup of shredded cheese on top of each patty, then place the remaining tortillas on top.
  • Carefully transfer the quesadilla burgers to the grill or skillet and cook for 2-3 minutes on each side, or until the tortillas are golden and the cheese is melted.
  • Remove the quesadilla burgers from the heat and let them rest for a minute before slicing them into wedges.
