Ingredients

  • 1 lb stewing beef, cubed
  • 1 cup pearl barley, rinsed
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

Sear the Beef

  • Heat olive oil in the pot over medium-high heat.
  • Add cubed beef, season with salt and pepper, and brown on all sides.

Saute Aromatics

  • Add diced onions, minced garlic, carrots, and celery.
  • Saute until vegetables are softened and aromatic.

Combine Ingredients

  • Pour in beef broth, add rinsed barley, bay leaves, and thyme.
  • Bring to a boil, then reduce heat and simmer for 45-60 minutes or until beef and barley are tender.

Season to Perfection

  • Customize the seasoning according to taste by making adjustments with salt and pepper.

Serve

  • Spoon the steaming soup into bowls and add a finishing touch of fresh parsley for garnish.
