Ingredients

  • 4 bone-in pork chops, about 1-inch thick
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup oyster sauce
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 teaspoon red pepper flakes (optional for added heat)
  • Vegetable oil (for grilling or searing)

Instructions

  • In a bowl, mix soy sauce, brown sugar, ketchup, oyster sauce, minced garlic, grated ginger, black pepper, and red pepper flakes (if using). Stir well to ensure the brown sugar dissolves completely, creating the marinade.
  • Put the pork chops inside a resealable plastic bag or a shallow dish. Pour the marinade over the chops, making sure they are fully coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.
  • Over medium-high heat, preheat your grill or stovetop skillet. Brush the grill grates or skillet with vegetable oil to prevent sticking.
  • Take out the pork chops from the marinade and allow any excess to drip off. Reserve the marinade for basting.
  • Grill or sear the pork chops for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C). Use a meat thermometer to ensure accurate doneness.
  • While grilling or searing, baste the chops with the reserved marinade to add extra flavor and keep them moist.
  • Once done, remove the pork chops from the grill or skillet and let them rest for a couple of minutes before serving.
