Ingredients

  • 200g Enoki mushrooms, roots trimmed
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 red chili pepper, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  • Heat vegetable oil in a skillet or wok over medium-high heat.
  • Add minced garlic and sliced red chili pepper. Sauté for about 1-2 minutes until fragrant.
  • Add the trimmed enoki mushrooms to the pan and stir-fry for about 3-4 minutes until they become tender and slightly crispy at the edges.
  • In a small bowl, mix soy sauce, honey, sesame oil, and red pepper flakes. Pour this sauce over the mushrooms and cook for an additional 2-3 minutes, allowing the sauce to coat the mushrooms evenly.
  • Season with salt and pepper to taste.
  • Transfer the spicy enoki mushrooms to a serving platter and garnish with chopped green onions and sesame seeds.
