Add the trimmed enoki mushrooms to the pan and stir-fry for about 3-4 minutes until they become tender and slightly crispy at the edges.
In a small bowl, mix soy sauce, honey, sesame oil, and red pepper flakes. Pour this sauce over the mushrooms and cook for an additional 2-3 minutes, allowing the sauce to coat the mushrooms evenly.
Season with salt and pepper to taste.
Transfer the spicy enoki mushrooms to a serving platter and garnish with chopped green onions and sesame seeds.
